Environmental Stewardship
University Dining Services is taking a leadership role to protect the environment - sensitivity to environmental issues is an integral component of our day-to-day business practices. Environmental stewardship is critical for preserving clean air, clean water and clean land, and Dining Services is actively researching and implementing practices that reduce our environmental impact.
To ensure stewardship of our environment, Dining Services has set a goal of obtaining Green Business Certification for one dining room and will be pursuing the use of certified ‘green’ chemicals by Fall of 2010.
Chemical Use
Currently, University Dining Services uses Apex EcoLab chemicals which meet the following environmental impact goals:
- Nontoxic to humans when diluted for use
- Noncombustible and noncorrosive to the skin and eyes
- Safe for aquatic life when diluted for use
- Ingredients greater than 100ppm are biodegradable
- Free of known carcinogens
The APEX system reduces our chemical, energy and water use through its optimization of washing and automated chemical dilution.
We are researching certified 'green' cleaning chemicals with a goal of using them in all units by fall of 2010. |

Pollution Reduction
In order to decrease and eventually eliminate pollution, Dining Services has instilled the following practices:
- 'No Idyling' policy for all receiving docks
- free parking for individuals who carpool to work
- 100% subsidy for employee bus passes and bicycle licensing
- promotion of alternative forms of transportation, including promotion of the UC Davis GoClub

Operations
In order to provide more transparency and legitimacy in our sustainable practices, University Dining Services is pursuing Green Business Certification for all units, starting out with a goal for Segundo Dining Room and the Culinary Support Center to be certified by Winter 2010.
All new dining renovations will meet receive LEED certification, including our Oxford Circle Dining Room, to be re-opening in spring of 2010. |
